Eggplant

Italian Eggplant are so versatile. Some recipes will tell you to salt them before cooking, but modern eggplant varieties do not have much bitterness so you can skip that step.

STORAGE: Store eggplant in the refrigerator, ideally in the crisper drawer. They will keep for 1 week or so, but they will begin to get soft. We recommend eating them when they are firm and fresh.
